Zucchini Cake

 Great tasting cake...moist and keeps well

1 cup white sugar

1 cup brown sugar

1 cup oil

3 eggs

1 teaspoon vanilla

3 cups flour

3/4 teaspoon soda

2 teaspoons baking powder

1 tablespoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

1/2 teaspoon allspice

1 teaspoon lemon or orange rind

1/2 cup chopped walnuts

1/2 cup raisins

2 cups shredded unpeeled zucchini

 

Cream sugar, oil and eggs. Add vanilla. Add sifted dry ingredients. Stir in raisins, nuts, and zucchini. Bake in tube pan or 2 loaf pans at 350 degrees 45 minutes.
