Refrigerator Rolls
Old family
recipe--My favorite rolls
2 cups milk
1/2 cup sugar
1/2 cup shortening
1 package yeast
1/4 cup lukewarm water
1 teaspoon salt
1/2 teaspoon soda
1 teaspoon baking powder
4-2/3 cups flour
Scald milk, sugar, and shortening. Cool to lukewarm. Add yeast which has been dissolved in the 1/4 cup warm water. Add milk
mixture. Add 4 cups flour. Let rise in warm place until double. Add
salt, soda and baking powder. Punch down. Add 2/3 cup (more or less)
flour to make a soft dough.
Cover and place in refrigerator at least 2 hours or until
ready to use. To use, punch down; make into rolls. Cover and let rise
in warm place until double. Bake 400°F
12-15 minutes.
If you don't
use all the dough, cover and refrigerate. Punch down and
refrigerate each time you make more rolls.
If you wish, substitute whole wheat flour for some of the white flour--I would
probably not use anymore than 1 1/2 cups.
