Carrot Cake

 

Moist cake and yummy good!!  Recipe from a dear friend.

Amounts in brackets for 9x13 cake

 

1-1/2 cups flour (2-1/4)

1-1/4 cups sugar (1-3/4) 

1-1/2 teaspoons baking soda (2) 

1-1/2 teaspoons cinnamon (2)

1/4 teaspoon salt

2/3 cup oil (1 cup)

2 eggs (3)

1-1/2 cup grated carrots

 (2-1/4)

1 cup crushed pineapple (1-1/2)

1/2 cup walnuts (3/4)

1/2 cup coconut (3/4)

 

Sift dry ingredients. Make a well. Add eggs, oil, carrots and pineapple. Mix well. Add coconut and walnuts. Bake in greased and flour 9 x 9 Pan 350°F 35-40 minutes.

 

Frosting

Amounts in brackets for 9x13 cake

 

3 ounces Cream cheese  (4-1/2 oz)

1/2 box Confectioners Sugar (3/4 box-about 1-1/2 cups)

1/4 cup butter (3/8 cup=1/4 + 2 tablespoons)

1/2 teaspoon vanilla (3/4)

 

Note: If you like lots of icing double the recipe

 

Also good with Caramel Icing

 

Mix 2 cups light brown sugar, 1/8 teaspoon soda and 2/3 cup milk together and cook to soft ball stage. Remove from heat and add 2 tablespoons butter and 1 teaspoon vanilla. Beat until spreading consistency.
