Brown Sugar Tarts

1 cup brown sugar

1 cup milk

2 tablespoons butter

1 tablespoon Cornstarch

1/2 teaspoon salt

1 teaspoon vanilla

2 stiffly beaten egg whites

 

Heat brown sugar, 3/4 cup of milk and butter in top of double boiler. To the remaining 1/4 cup milk, add flour and cornstarch and blend to have smooth. Beat this in with the egg yolks and add with the salt to the brown sugar mixture. Cook in double boiler until thick, stirring constantly.  Add vanilla. Stir. Fold in stiffly beaten egg whites and bake in pre-baked tart shells, 350 degrees about 10 minutes. Top with whipped cream. Fills about 9-10 tart shells.
